I usually don't deviate much from the set I posted. If I need it to turn a little more I will lower the perch a click or two. I keep the tire pressures the same everywhere as they seem to have the most grip at that pressure.
If you are having serious issues with oversteer, try upping the front tire pressure a click and maybe move the brake bias forward.
UPDATE - 5/5/2010
Based upon the lessons learned from last seasons experience and after some adjustments to my wheel (ECCI) late in the season, I realized that many of my season one setups would need some tweaking. So, for season two, I've decided to build my own setups from scratch. One common theme of my setups from last season was that they were generally pretty tight...I.E. safe to drive. This season, I'm vowing to create some slightly looser and hopefully faster sets, that will be more consistent over the course of an entire race distance. Also, I've updated all my season one sets below, including the qualifying time and fastest race lap. The only track that is missing from the official iRacing series is Indy.
